The Lab Experience
We call it a lab because every detail is intentional. Our broths are slow-simmered for over 12 hours. Our noodles are handmade. Nothing is frozen, diluted, or rushed.

The Broth
One of the most important components of a successful bowl of ramen is the “Broth”. Bringing together a combination of chicken bone, pork bones, vegetables and aromatics in a slow all-day simmer is what extracts those savory “Umami” flavors.
The Noodles
The main factors in a great ramen noodle is its bounciness, the way it adheres to the broth, and their texture in the mouth which overall contributes to its “slurp value”. More importantly, the noodles must be made fresh!
